Sardine Patties

Sardine Patties

-5 (3.75 oz) tins of sardines

-1 cage free, organic egg

-appx 1/4 cup almond flour

-1/4-1/2 cup mayo (I used the Ojai Cook's Lemonnaise made with cage free eggs)

-1 to 2 tbsp mustard

-parsley

-pink Himalayan salt, pepper, and garlic powder to taste

Directions:

-mix all the ingredients well

-warm a flat pan on low to medium heat. Add coconut oil

-form patties while squeezing out excess liquid (particularly if the sardines were packed in oil)

-place on pan and flatten a bit

-pan fry on low to medium heat

-turn patties over when nicely browned, press lightly, and continue frying until cooked through

-place cooked patties on dish lined with paper towels to gather any excess oil

-I served this alongside asparagus lightly pan fried in coconut aminos.

-kiddos (and adults) love dipping patties in mustard, organic ketchup, or mustup (a combo of the two)
