No time to cook? On a tight budget? Can't stand complicated recipes? Well, have I got a recipe for you (cue the cheesy smile and wink).
Seriously, I have no idea how I've never tried this ridiculously tasty and almost shamefully simple recipe from Rubies and Radishes.
All it takes is a slow cooker, 2 lbs. skinless chicken breasts or thighs (I got my free range organic chicken at Farm to Fork Foods), and 16 oz salsa verde. Place all (read: 2) ingredients in the slow cooker on low for 5 hours. If you're at home at hour 4, pull chicken apart with 2 forks. Serve over rice or inside your favorite gluten free or paleo tortillas alongside steamed, roasted, or grilled vegetables. I plan on trying it with pork too.
