

Oatmeal Bar Night
I have to admit--I really miss oatmeal. Like a lot. When I eliminated gluten from my diet, I was excited to still be able to have my morning oats, but a couple of years after going gf, I had to stop eating even the certified gluten free kind when I began developing a strong sensitivity to it and other gf grains. And this is where my paleo life began. My daughters, however, are not sensitive to the gf oats, and because the girls are paleoish, they'll be enjoying some tonight.

Yogurt Bar
Yogurt Bar I placed the whole milk yogurts with the optional mix-ins/toppings, which included raspberries, blueberries, gluten free granola, and raw walnuts on the table, and the little ladies customized their yogurts, and, as you can see, showed me they like the "build-your-own" types of meals. I know this isn't fancy, and it is most definitely not gourmet, but it fits the bill--my bill--nutritious, quick, easy, and completely family-friendly! #yogurtbar #breakfast #snack #b


Everyone loves Parfaits! (and we all love Shrek)
This evening featured a Parfait Bar, where each of us selected our own mix-ins for the Greek yogurt. Some options: low-sugar granola, gluten-free crushed nut and rice puffs, raisins, sunflower seeds, hemp hearts, and coconut flakes (my favorite!). Topped with a drizzle of raw honey, and voila, dinner! Paleo Pumpkin Pancakes
Paleo pumpkin pancakes for three animal-printed princesses. -4 free-range eggs -1/2 cup (organic) pumpkin puree -3 tbsp almond flour -3 tbsp coconut flour -2 tsp coconut oil -1/2 tsp vanilla extract -1/2 tsp cinnamon -honey/stevia to taste (I did both) I mixed the batter in the vitamix to get the consistency I wanted and used coconut oil for frying them.
