

Simply Roasted Vegetables
I never miss an opportunity to make (and devour) simple roasted vegetables. This is one of my comfort foods. Add a healthy protein (like grass fed beef, grilled fish, oven-roasted chicken, pastured eggs), and high-quality fat (ex. avocado, coconut oil, nuts/seeds), and voila, you've got yourself a fantastically healthy meal! Baked Potato Bar Night
Tonight's dinner was so simple to prepare: Baked Potato Bar night!
Baked potatoes (can substitute sweet potatoes), steamed broccoli, raw milk cheese (from Trader Joe's--purchased as a block and shredded at home), uncured Apple wood smoked bacon (Dabecca, from Costco), and Kerrygold grassfed butter (Costco). Gluten Free Mac N Cheese--with the help of my little sous chefs
Gluten free and somewhat paleoish version of a well-loved comfort food: Mac N Cheese. Using this small list of simple ingredients: Kerrygold butter to sauté onions, gluten free & non-GMO brown rice pasta, and raw milk cheese (this is a fave we buy at trader joes), and applewood bacon to add to pasta once it's done (with added butter as needed). Broccoli Slaw "Noodles"
For those who want a gluten free, grain free, low carb, paleo alternative to noodles, this broccoli slaw (that I buy at Trader Joe's) is one of my fave vegetable noodles. Of course, there's the now famous zoodles and the always-fun spaghetti squash, but here's another one to add to your noodle-alternative repertoire. Leave raw, steam, or cook on low heat for a couple of minutes with bone broth as I enjoy doing. Top with a sauce if you wish (like organic pasta sauce or homemad
