Simply Roasted Vegetables

I never miss an opportunity to make (and devour) simple roasted vegetables. This is one of my comfort foods. Add a healthy protein (like grass fed beef, grilled fish, oven-roasted chicken, pastured eggs), and high-quality fat (ex. avocado, coconut oil, nuts/seeds), and voila, you've got yourself a fantastically healthy meal!

Simply salted and roasted in the oven on 400 degrees F for 30 minutes. Simple is perfect!
