

Simply Roasted Vegetables
I never miss an opportunity to make (and devour) simple roasted vegetables. This is one of my comfort foods. Add a healthy protein (like grass fed beef, grilled fish, oven-roasted chicken, pastured eggs), and high-quality fat (ex. avocado, coconut oil, nuts/seeds), and voila, you've got yourself a fantastically healthy meal! Broccoli Slaw "Noodles"
For those who want a gluten free, grain free, low carb, paleo alternative to noodles, this broccoli slaw (that I buy at Trader Joe's) is one of my fave vegetable noodles. Of course, there's the now famous zoodles and the always-fun spaghetti squash, but here's another one to add to your noodle-alternative repertoire.
