I love when accidents turn out to be good things! Last night, while watching Whiplash with the hubby, I put broccoli florets in the oven to roast, forgot to get the timer going, and got really into the movie. I never miss an opportunity to make (and devour) simple roasted vegetables. This is one of my comfort foods. Add a healthy protein (like grass fed beef, grilled fish, oven-roasted chicken, pastured eggs), and high-quality fat (ex. avocado, coconut oil, nuts/seeds), and voila, you've got yourself a fantastically healthy meal!
