Snow Day Pancakes
Another ❄️snowday ❄️ which means another day to keep the monkeys occupied and helping in the kitchen. They asked for pancakes, and pancakes they shall make: gluten free and Paleoish pancakes made with coconut flour, eggs, organic whole milk, and honey (to see the recipe I adapted from, go to nourishingdays.com). These pancakes go perfectly with Kerrygold grassfed butter and maple syrup or raw honey. The smoothie is made with frozen organic berries, organic spinach, hemp heart

Baked Potato Bar Night
Tonight's dinner was so simple to prepare: Baked Potato Bar night!
Baked potatoes (can substitute sweet potatoes), steamed broccoli, raw milk cheese (from Trader Joe's--purchased as a block and shredded at home), uncured Apple wood smoked bacon (Dabecca, from Costco), and Kerrygold grassfed butter (Costco). Very fitting (and filling) for a cold night. Brrrrr. #dinner #bakedpotatobar #grassfedbutter #kerrygold #paleoish #glutenfree #rawmilkcheese #baconbits #bacon #easydoes

Gluten Free Mac N Cheese--with the help of my little sous chefs
Gluten free and somewhat paleoish version of a well-loved comfort food: Mac N Cheese. Using this small list of simple ingredients: Kerrygold butter to sauté onions, gluten free & non-GMO brown rice pasta, and raw milk cheese (this is a fave we buy at trader joes), and applewood bacon to add to pasta once it's done (with added butter as needed). Salt and pepper, and call it a day. My two little ones wanted to help prepare our GF Mac N Cheese--little asked if she could put the

The following recipe is for one person: start by making strong coffee, adding 1 tbsp organic coconut oil, 1 tbsp Kerrygold butter, and a bit of stevia and mixing the ingredients until they melt. I then put the coffee into my Vitamix and blend until the oil and butter emulsify (this makes for a

Homemade bulletproof iced coffee
For the last couple of months, I've been making my own version of the ever-so-popular bulletproof coffee in the mornings for my husband and me. I start by melting a tablespoon each of coconut oil and Kerrygold grass-fed butter into hot French-pressed organic coffee and sweeten it with stevia. Since we like iced coffee, I then give it a whirl in my Vitamix so that the butter and oil emulsify and get a creamy texture. It also prevents them from chunking up once you add the ice-
