Honey-Nut-Date Bars:
One of the most popular snacks in our house are these honey-nut-date bars I prepare on a weekly basis, because they go fast around here!
For this batch, 1 cup raw almonds, 1 cup raw walnuts, 1/4 cup unsalted cashews, 1/4 cup macadamia nuts, 10 presoaked dates, 1/2 cup shredded unsweetened coconut, and 1/2 cup raw, unfiltered honey. Place all ingredients in the food processor and grind to desired consistency. You may add more honey or dates for a stickier batch. Take out of processor and add 1/2-1 cup dark chocolate chips, mix well and form into a ball.
Then flatten onto a surface lined with parchment paper and shape into a rectangle. Straighten sides. I prefer to cut into bars before placing in the fridge. Needs to be in the fridge for at least 30 minutes or you can put in freezer for speedier time.
These are full of protein, healthy fats, and unprocessed carbohydrates, and do a great job holding you over between meals or if you need a midday pick-me-up!
Note: feel free to substitute seeds for nuts if you are intolerant to nuts
