On this Sunday Prepday, I made food for my gang for the week, as well as plenty to share with my mom. Since my dad is in the hospital recovering from a heart valve replacement, we are doing what we can to help lessen the stress. February 22nd Sunday Prep-Day
A snippet from Sunday Prep-Day: All gluten free and paleo, prepped and ready for the week! My super simple and healthy Sloppy Joe's (using grassfed ground meat from @farmtoforkfoods), easy egg muffins (using organic, cage free eggs), and Elana's Pantry paleo chocolate cupcakes. Prepping Ahead Sets you up for Success
The current situation in our kitchen: paleo salmon patties--filled with omega-3 fatty acids and protein, and egg muffins (made of cage free, organic eggs and organic sharp cheddar)--a super source of protein, choline, and calcium. These have become regulars in our house, as they're perfect for school lunches, meals, and quick and healthy snacks. Sunday Prep-Day
I really do love my Sunday Prep-Day because not only do I feel good about getting prepped and organized for the upcoming week, but also because there's something very calming and meditative about the cooking and sorting and being proactive and productive (to me, anyways...). The best part of this Sunday is that my hubby was my sous chef and a great prepday companion. He got the bacon chopped and ready for his consumption...I mean for me to put into meatballs and egg muffins;)


Easy Egg Muffins
Just made these egg muffins with sautéed onions and broccoli and shredded raw cheese (plus salt and pepper) for kids' lunch tomorrow! SO easy!! These make for incredibly nutritious and super delicious additions to lunches and dinners, and as super snacks!! I love making them on my Sunday Prep-Day so that they are ready for the week ahead. Sunday Prep-Day--Setting up for a successful week!
Every Sunday (or, alternatively, Saturday), I prepare some of the same staples for the week ahead:
~ Bone broth to use as a soup base or for cooking vegetables (or when we aren't feeling well and just can use a warm cup of broth to speed the healing)
~ Hard-boiled eggs to throw into lunch boxes, have as snacks, or for making deviled eggs or egg salad
~ Baked sweet potatoes to eat as is or mashed for lunch or dinner
