On this Sunday Prepday, I made food for my gang for the week, as well as plenty to share with my mom. Since my dad is in the hospital recovering from a heart valve replacement, we are doing what we can to help lessen the stress. February 22nd Sunday Prep-Day
A snippet from Sunday Prep-Day: All gluten free and paleo, prepped and ready for the week! Prepping Ahead Sets you up for Success
The current situation in our kitchen: paleo salmon patties--filled with omega-3 fatty acids and protein, and egg muffins (made of cage free, organic eggs and organic sharp cheddar)--a super source of protein, choline, and calcium. These have become regulars in our house, as they're perfect for school lunches, meals, and quick and healthy snacks. Tuna Patties Too (prepping the patties the night before)
Because weeknights are incredibly busy, I like to do as much prepwork as possible on weekends to make dinnertime simple and stress-free. Since these tuna patties are on the menu for tomorrow's dinner, I went ahead and mixed all the ingredients, so that all I will have to do come Monday eve is pan fry the patties. Tuna Patties

* 3 tuna cans, drained (can substitute with salmon)
* 2 eggs
* 3 tablespoons mayo
* 1-2 tablespoon relish
* 1 teaspoon to 1 tablesp

I always prepare hardboiled eggs on Sundays so that I can have them at the ready for school lunches, a quick snack, deviled eggs, egg salads, or for slicing onto a chef salad.
