Paleo, gluten free blueberry muffins
Paleo, gluten free blueberry muffins (adapted from elanaspantry.com):
-1 cup blanched almond flour
-2 tablespoons coconut flour
-1/2 teaspoon baking soda
-1/4 teaspoon Celtic sea salt
-1/2 teaspoon cinnamon
-1/4 cup coconut oil, melted
-1/4 cup raw & unfiltered honey
-3 cage free organic eggs
-1 tablespoon vanilla extract
-1/4 cup fresh or frozen organic blueberries
-combine all dry ingredient in a bowl
-in a separate bowl, blend oil, honey, eggs, and vanilla
-blend dry ingredients into wet and carefully mix in blueberries
-scoop about 1/4 cup batter into lined regular sized muffin cups
-bake muffins for 20 minutes at 350 (oven times may vary, so please start checking after 15 minutes)
