Accidental Broccoli "Chips"
I love when accidents turn out to be good things! Last night, while watching Whiplash with the hubby, I put broccoli florets in the oven to roast, forgot to get the timer going, and got really into the movie. By the time I got up and realized the broccoli florets were still in the oven, they got a good char on them. BUT, they turned out so delicious because they were crunchy and fun-sized, and the pink Himalayan salt I sprinkled on them prior to roasting added to the snacky f


Sweet and Refreshing Carrot Salad
This shredded carrot/raisin/orange juice salad is one that my mom and Safta used to make for us when we were little, so it reminds me of my childhood, especially of my after school snacks. Not sure where the origins of this sweet and refreshing salad are from, but in Israel (where both my parents grew up), my mom and dad had it a lot as kids. Simply Roasted Vegetables
I never miss an opportunity to make (and devour) simple roasted vegetables. This is one of my comfort foods. Add a healthy protein (like grass fed beef, grilled fish, oven-roasted chicken, pastured eggs), and high-quality fat (ex. avocado, coconut oil, nuts/seeds), and voila, you've got yourself a fantastically healthy meal! Baked Potato Bar Night
Tonight's dinner was so simple to prepare: Baked Potato Bar night!
Baked potatoes (can substitute sweet potatoes), steamed broccoli, raw milk cheese (from Trader Joe's--purchased as a block and shredded at home), uncured Apple wood smoked bacon (Dabecca, from Costco), and Kerrygold grassfed butter (Costco). Oatmeal Bar Night
I have to admit--I really miss oatmeal. Like a lot. When I eliminated gluten from my diet, I was excited to still be able to have my morning oats, but a couple of years after going gf, I had to stop eating even the certified gluten free kind when I began developing a strong sensitivity to it and other gf grains. And this is where my paleo life began. My daughters, however, are not sensitive to the gf oats, and because the girls are paleoish, they'll be enjoying some tonight.


Gluten Free Mac N Cheese--with the help of my little sous chefs
Gluten free and somewhat paleoish version of a well-loved comfort food: Mac N Cheese. Using this small list of simple ingredients: Kerrygold butter to sauté onions, gluten free & non-GMO brown rice pasta, and raw milk cheese (this is a fave we buy at trader joes), and applewood bacon to add to pasta once it's done (with added butter as needed). Broccoli Slaw "Noodles"
For those who want a gluten free, grain free, low carb, paleo alternative to noodles, this broccoli slaw (that I buy at Trader Joe's) is one of my fave vegetable noodles. Of course, there's the now famous zoodles and the always-fun spaghetti squash, but here's another one to add to your noodle-alternative repertoire. While we were trying to keep busy indoors during yesterday's snow day, my girlies put together their lunch for today. Not too bad, eh?
